When I came to this country more than 40 years ago, I found myself longing for the smell and comfort of Vietnamese cooking - especially Phở. Growing up as a child in Vietnam, the smell of phở (pronounced fuh), a Vietnamese national dish, seemed like a part of the air itself. My mother, like many other Vietnamese immigrants, felt the same way. We missed the taste of Vietnamese dishes with fresh veggies and a balanced blend of sour, sweet, savory, salty, bitter, and spicy flavors.
